Frequently Asked Questions
Everything you need to know about ordering, receiving, and enjoying the new harvest.
Novellos are produced in limited quantities and are available only once each harvest. We fulfill Novello orders on a first-in, first-out basis, so ordering earlier means your order is placed earlier in the shipping queue.
For the 2026 harvest, we expect shipping to begin around November 23. We start fulfilling orders as soon as the oils arrive at our facility. Because multiple Novellos arrive from different producers and countries, some orders may ship a few days later depending on the products they contain.
Novello is bottled with intensely fresh, fruity aromas predominant of green olives, fresh cut grass and herbs. Its flavor is typically robust and spicy with a pleasant, slightly bitter finish. Check each product’s description for indications of the intensity.
Use it anywhere its fresh character can take center stage: over grilled bread, vegetables, beans, soups, pasta, fish, meats, or simply on its own for tasting.
Store extra virgin olive oil in a cool, dark place away from heat and direct sunlight, and keep the bottle tightly closed between uses.
